Restaurant Recipe Spotlight- Acqua Al 2

Just steps away from the bustling Piazza della Signoria, Acqua Al 2 is tucked away where it remains as Florence's favorite charming spot. A meeting place for writers, artists, and influential Florentines to dine on exquisite food and good wine. International celebrities, such as Samuel L. Jackson, Peter Weller, Herbie Hancock, and Lauren Hutton, have also sampled the restaurants Tuscan cuisine. Acqua Al 2 has an Aperitivo (an Italian Happy Hour) on Thursday evenings from 6-8 P.M. Complimentary appetizers are available in the bar area for patrons who order cocktails.

Acqua Al 2 is located in the historic Gaslamp District at 322 5th Avenue, between J and K, it is open nightly beginning at five o'clock in the evening.

Maccheroni alla Vodka
(Penne pasta with milk and vodka sauce and a touch of tomato sauce)

1 lb of pasta maccheroni
2 oz. of fresh mozzarella
1/2 tsp. tomato paste
4 oz. milk
1 oz. vodka
2 oz. of parmesan cheese
Salt & pepper to taste

In a medium pot, fill with 3/4 of water and bring to a boil. Add the pasta and a tablespoon of salt, stirring often to ensure pasta does not stick to the pot. Cook for approximately 6 minutes or 2 minutes less than what is said in the directions. Remove the pasta, drain and rinse under cold water. Set aside.

In a 12 inch sauté pan, add the fresh mozzarella (sliced in 1/2 inch cubes), the tomato paste, milk and salt and pepper, and bring to a boil. When the mozzarella is melted (approximately 3 minutes), add the pasta and continue cooking until sauce is reduced (approximately 2 minutes). Add the vodka and let alcohol evaporate (approximately 30 seconds). Finish by adding the parmesan cheese.
Stir well and serve warm. Enjoy!
